  • 1 green capsicum, cut into strips
  • 1 red capsicum, cut into strips
  • 1 bunch coriander, leaves picked
  • 2 red onions, cut into thin wedges
  • 3 spring onions, chopped
  • 8 small soft tortillas
  • 1 cup light sour cream
  • 1tablespoons ground cumin
  • 2teaspoons smoked paprika
  • 2tablespoons lemon juice
  • 2teaspoons onion powder
  • 450grams pork fillet
  • 1/4 cup vegetable oil

Description

Make these pork tacos with capsicum for a flavour-packed and quick dinner. Enjoy with the toppings your family loves, like cheese, avocado or even jalapeños.

Method

Step 1 of 5

Cut pork fillet into thin strips. Combine spices in a large bowl. Add pork and toss well to combine. Set aside.

Step 2 of 5

Heat 1 tbs oil in a large frying pan. Add onion and capsicum and cook over high heat for 5 minutes, stirring often until vegetables are just tender. Remove from pan.

Step 3 of 5

Heat remaining oil in same frying pan and cook pork in batches over medium to high heat until well browned all over.

Step 4 of 5

Return pork and vegetables to pan and cook for 2-3 minutes until pork is cooked through. Toss through lemon juice and half the coriander. Chop remaining coriander leaves and stir into sour cream with spring onions.

Step 5 of 5

Heat tortillas according to packet instructions. Fill tortillas with pork mixture and top with sour cream. Roll up and serve immediately.
