  • 12 green king prawns
  • 4 barramundi fillets
  • 1 small red chilli, seeded and finely chopped
  • 2tablespoons fresh coriander leaves
  • 1teaspoons ginger, finely grated
  • 1 mango, peeled and diced
  • 1/2 small red onion, finely sliced
  • 1 lime juiced
  • 1 pinch black pepper, freshly ground
  • 1tablespoons olive oil (to brush)
  • 1/2 cup macadamia, roasted, halved
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 4

Peel prawns, leaving tails intact. Brush fish and prawns with oil and season to taste.

Step 2 of 4

Heat a non-stick frying pan over medium-high heat.

Step 3 of 4

Combine mango, macadamias and onion in a bowl. Mix lime juice, chilli and ginger together, pour over mango and toss through.

Step 4 of 4

Cook prawns and fish for 2-3 minutes each side until golden and just cooked through. Transfer to serving plates and serve with mango salsa. Garnish with coriander.
