  • 2 cloves garlic, crushed
  • 1 cup long grain rice
  • 1 bunch coriander (with root)
  • 3 cm piece ginger, peeled, grated
  • 400grams stir-fry vegetables
  • 1 brown onion, finely chopped
  • 1 1/2 cup chicken stock
  • 160grams Ayam Honey & Soy Marinade Sauce
  • 650grams chicken stir-fry strips
  • 1/4 cup vegetable oil

Method

Step 1 of 4

Wash and finely chop half coriander root, remove sprigs. Reserve remaining sprigs for garnish.

Step 2 of 4

Heat 2 tbs oil in a deep frying pan over medium heat. Add onion, ginger and garlic and cook for 3 minutes or until soft. Stir in rice, stock and water. Bring to the boil and simmer for 5 minutes.

Step 3 of 4

Add vegetables, cover and cook for 5 minutes or until rice is tender and liquid has evaporated. Season to taste.

Step 4 of 4

Meanwhile, heat remaining oil in a frying pan over medium-high heat. Cook chicken, in batches, for 3 minutes or until golden. Return all chicken to pan. Add marinade and stir until well combined. Spoon the rice onto serving plates. Top with the chicken and reserved coriander sprigs.
