  • 1 cup self-raising flour
  • 1 red onion (finely chopped)
  • 12 cherry tomatoes (halved)
  • 4 zucchini (grated)
  • 1/2 cup finely grated parmesan
  • green salad (to serve)
  • 250grams mozzarella
  • 2tablespoons olive oil
  • 6 free range eggs (lightly whisked)
  • 1/4 cup chives
  • 100grams hot salami (chopped)

Method

Step 1 of 5

Preheat oven to 180°C. Line base and sides of a 10-cup-capacity baking dish with baking paper.

Grate 1/2 cup mozzarella, combine with parmesan and set aside. Cut remaining mozzarella into 1cm cubes.

Combine the zucchini, salami, onion, chives and flour in a large bowl and season with salt and pepper.

Whisk eggs and oil together. Pour over zucchini mixture, add cubed mozzarella and mix well to combine. Transfer to dish. Arrange tomato, cut-side up, into mixture, and scatter over reserved cheese mixture.

Step 5 of 5

Bake for 30-35 minutes or until puffed and golden. Serve warm or at room temperature with a green salad.
