  • 5milliliter Woolworths extra virgin olive oil cooking spray
  • 400grams Woolworths pork stir-fry
  • 400grams Woolworths Cook Asian-style vegetables stir-fry mix
  • 1/2 cup Woolworths coconut cream
  • 2tablespoons Woolworths crunchy peanut butter
  • 2tablespoons Woolworths sweet chilli sauce
  • 2 Lebanese cucumbers, sliced

Description

On the table in 15 minutes, this warm satay pork salad makes a speedy summer weeknight dinner.

Method

Step 1 of 4

Spray a large frying pan with oil and heat over medium-high heat. Add pork and stir-fry for 3 minutes or until light golden. Transfer to a plate.

Step 2 of 4

Add vegetable mix to pan. Stir-fry for 1 minute or until slightly tender but still crisp. Remove from heat. Add pork and toss to combine.

Step 3 of 4

Whisk coconut cream, peanut butter and sweet chilli sauce in a small saucepan over medium heat for 2 minutes or until well combined and heated through.

Step 4 of 4

Divide pork mixture among serving plates. Drizzle with sauce. Top with cucumber to serve.
