  • 1 small red onion, thinly sliced into rounds
  • 1/3 cup rice wine vinegar
  • 450grams Macro firm tofu
  • 1tablespoons vegetable oil
  • 1/2 cup sweet chilli sauce
  • 350grams golden citrus slaw kit
  • 4 wholegrain wraps, warmed
  • 1 continental cucumber, deseeded, cut into 10cm lengths
  • 1/3 cup unsalted, roasted peanuts, chopped

Description

You don't have to be on a plant-based diet to enjoy these delicious vegan wraps of sweet chilli-glazed tofu and crunchy vegetables encased in a soft tortilla.

Method

Step 1 of 4

Place onion and vinegar in a bowl. Season with a pinch of sugar and salt. Add 1/4 cup water and stir to combine. Set aside.

Step 2 of 4

Meanwhile, cut tofu into 8 slices. Heat oil in a large frying pan over medium-high heat. Cook tofu, turning, for 5 minutes or until golden and warmed through. Add sauce and turn to coat. Remove from heat.

Step 3 of 4

Meanwhile, make slaw according to packet instructions. Drain onion.

Step 4 of 4

Place wraps on bench. Divide slaw, cucumber, tofu and onion among wraps. Drizzle with pan juices and scatter over peanuts. Roll to enclose filling and serve.
