- 1tablespoons maple syrup
- 1tablespoons apple cider vinegar
- 1 Lebanese cucumber, peeled into ribbons
- 2tablespoons coriander, finely chopped
- 1tablespoons extra virgin olive oil
- 340grams Bean Supreme beetroot burgers
- 1 small red onion, sliced into rounds
- 1/2 cup dairy-free coconut yoghurt
- 2 handful gem lettuce
- 2 tomatoes, sliced
Description
Try this plant-based burger recipe with delicious black bean and beetroot patties and crisp lettuce leaf 'buns' for a healthier burger option.
Method
Step 1 of 4
Place maple syrup, vinegar, cucumber and half the coriander in a small bowl and stir to combine. Set aside until required.
Step 2 of 4
Heat oil in a large frying pan over medium heat. Cook burgers for 4 minutes on each side or until golden and warmed through, adding onion to pan for last 4 minutes of cooking to soften.
Step 3 of 4
Meanwhile, combine yoghurt and remaining coriander in a small bowl. Season.
Step 4 of 4
Drain cucumber. Place half the lettuce leaves on a clean surface, then top with burgers, tomato, onion, cucumber, a drizzle of yoghurt mixture and extra coriander. Sandwich with remaining lettuce leaves and serve.
