  • 3 ripe bananas, thickly sliced
  • 1tablespoons white chia seeds
  • 1/4 cup cacao powder
  • 1 cup Happy Way vegan choc flavour pea protein powder
  • 5milliliter olive oil cooking spray
  • 1/3 cup dairy-free coconut yoghurt
  • 125grams strawberries, hulled, thickly sliced
  • 60grams blueberries
  • 1tablespoons maple syrup
  • 2tablespoons cacao nibs

Description

Put a healthier twist on breakfast with this chocolatey pancake recipe. These pancakes are vegan and contain pea protein – they're sure to hit the spot.

Method

Step 1 of 3

Place oats, milk, banana, chia seeds, cacao powder and protein powder in a blender. Blend for 15 seconds or until a smooth batter almost forms. Set aside for 15 minutes.

Step 2 of 3

Lightly spray a large frying pan with oil, then place over medium-low heat. Add 1/3 cup batter to pan and spread to form a 10cm round. Cook for 2 minutes or until pancake is two-thirds of the way cooked through. Flip pancake, then cook for a further 1 minute or until cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining batter to make 12 pancakes in total.

Step 3 of 3

Divide pancakes among plates. Top with yoghurt, berries, syrup and cacao nibs.
