  • 200grams vegan dark chocolate chips
  • 1/2 cup aquafaba
  • 100grams granulated sugar

Description

A light, airy ultra chocolaty vegan mousse using only 3 ingredients, including zero waste aquafaba from a tin of chickpeas.

Method

Step 1 of 3

Melt the chocolate chips in the microwave in 30 second intervals, stirring until the chocolate is fully melted. Set aside to cool.

Step 2 of 3

Whip the aquafaba and granulated sugar using a handheld or stand up mixer for 10 minutes until the sugar is dissolved and the mixture is light and fluffy.

Step 3 of 3

Gently fold the dark chocolate into the whipped aquafaba, add the mousse into 4 jars or glasses. Chill in the fridge to set for a minimum of 1 hour.
