- 2teaspoons dried oregano (or mixed herbs)
- 1/2teaspoons smoked paprika
- 1 lemon, cut into wedges (to serve)
- rice bran oil (to shallow fry)
- 2 eggs
- 6 thick rice cakes
- 1/2 cup gluten-free plain flour
- 4 veal schnitzels
- 1 lebanese cucumber, thinly sliced
- 2 tomatoes, cut into wedges (to serve)
- 60grams baby rocket leaves (to serve)
Method
Step 1 of 3
Break rice cakes into a food processor. Add oregano and paprika and process until crumbs form. Transfer mixture to a plate. Place flour on a separate plate and season with salt and pepper. Break eggs into a bowl and whisk lightly.
Step 2 of 3
Coat veal in flour, dip into egg and press on crumbs to completely coat. Chill for 10 minutes.
Step 3 of 3
Heat oil in a large frying pan over medium heat. Cook veal, in two batches, for 3 minutes on each side or until golden and crisp. Serve with salad and lemon.
