  • 2teaspoons fajita spice mix
  • 3 cloves garlic, peeled and grated
  • 400grams black beans, drained
  • 800grams chopped tomatoes
  • 12 sheets fresh lasagne
  • 200grams creme fraiche
  • 100grams mozzarella, grated

Description

Shake up your lasagna with the Mexican flavours of spiced turkey and black bean chilli.

Method

Step 1 of 4

Pre-heat the oven to 180°C. Heat the oil in a large pan and cook the onion and turkey mince for 5 minutes. Add the garlic and spice mix and cook for 2 minutes.

Step 2 of 4

Stir in the black beans and chopped tomatoes, bring to the boil, reduce the heat and simmer for 15 minutes until reduced.

Step 3 of 4

Spoon a quarter of the mince mix into a large baking dish, top with lasagne sheets and repeat, finishing with a layer of sheets.

Step 4 of 4

Mix the creme fraiche and mozzarella together in a bowl and dollop the mix on top of the lasagna. Spread out to form an even layer and bake for 25 minutes until golden and bubbling.
