- 4 large potatoes, peeled and sliced into chunky chips

Description
These triple cooked chips are restaurant quality and well worth the extra effort.
Method
Step 1 of 3
Place the potatoes in a large pan of salted, cold water, bring to the boil and cook for 6-8 minutes. Drain well, tip back into the pan, place the lid on and shake well to get jagged edges.
Step 2 of 3
Heat the oil in a large saucepan until a piece of potato lightly sizzles when dropped in, about 150°C if you have a thermometer. Cook the potatoes for 6-8 minutes until beginning to crisp but not brown. Drain well on kitchen paper and set aside to cool down.
Step 3 of 3
Place the oil back on the heat until very hot, about 180°C, and fry the chips for 5 minutes, or until golden and crisp. Drain well on kitchen paper, sprinkle with salt and serve.
