  • 300grams oven chips, frozen
  • 1tablespoons olive oil
  • 1 large onion, peeled and sliced
  • 2.50centimeters ginger, peeled and grated
  • 2 cloves garlic, peeled and minced
  • 1tablespoons plain flour
  • 2tablespoons curry powder
  • 1 1/3 cup vegetable stock, made with 1 stock cube
  • 200grams chopped tomatoes
  • 1teaspoons honey
  • 1 medium red chilli, sliced
  • 2tablespoons coriander, fresh, chopped

Description

A quick homemade curry sauce takes oven chips to the next level flavour-wise.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Spread the oven chips out on a baking tray and bake for 25 minutes, tossing halfway through.

Step 2 of 3

Heat the oil in a large pan and cook the onions, ginger and garlic for 3-4 minutes. Add the flour and curry powder and cook for 1 minute. Whisk in the vegetable stock and chopped tomatoes, add honey and simmer for 15 minutes until reduced.

Step 3 of 3

Remove from the heat and blend the sauce until smooth with an immersion blender. Divide the chips between 4 bowls, top withe curry sauce, chilli and chopped coriander and serve.
