- 1teaspoons salt
- 300grams plain flour
- 2teaspoons baking powder
- 60grams lard fat, chilled and cut into cubes, (save 10g for greasing)

Method
Step 1 of 6
Put the flour, salt, and baking powder into a large bowl. Add the lard or vegetable fat. Lightly rub in the lard with your fingertips until the mixture looks like fine crumbs and there are no larger lumps of fat.

Add 150ml of warm water to the flour mixture, pouring it in from a jug around the edges of the bowl. Using a spoon, bring the mixture together to form a rough, soft dough.

Turn it out onto a lightly floured work surface and knead for a few minutes until smooth. Put the dough in a greased bowl and cover with cling film. Rest in a warm place for 1 hour, until puffed up.
Step 4 of 6
Turn the dough out onto a floured work surface and divide it into 8 equal portions with a sharp knife. Take 1 piece and leave the others covered with cling film to prevent them from drying out.
Step 5 of 6
Roll each piece of dough out on a floured work surface to a circle 20-25cm in diameter. Stack the rolled tortillas with a piece of cling film between each. Heat a frying pan over a medium heat.
Step 6 of 6
Take a tortilla and dry fry for 1 minute. Turn it over and continue to fry until both sides are cooked and browned in places. Transfer to a wire rack and repeat to cook all the remaining tortillas. Serve warm or cool.
