Dressing
- 4tablespoons sweet chilli sauce
- 2 limes, grated rind and juice
- 2teaspoons light soy sauce
- 250grams mixed long-grain and wild rice, freshly cooked, cooled
- 2 carrots, thinly sliced
- 1/2 cucumber, halved, deseeded and thinly sliced
- 1 red capsicum, cored, deseeded and thinly sliced
- 75grams bean sprouts
- 4 spring onions, thinly sliced
- 4tablespoons fresh coriander, chopped
- 50grams roasted unsalted peanuts, roughly chopped
- 1 lime, cut into wedges (to serve)
Method
Step 1 of 3
Place the cooked rice, carrots, cucumber, red capsicum, bean sprouts, spring onions and coriander in a large bowl and mix together thoroughly.
Step 2 of 3
Make the dressing. Whisk the dressing ingredients together in a small bowl, then pour over the salad and toss to coat.
Step 3 of 3
Scatter the salad with the peanuts and serve immediately with lime wedges.
