  • 2tablespoons hoisin sauce
  • 3 tortillas
  • 25grams fresh ginger, julienned (Approx thumb sized)
  • 1 red chilli, seeded and julienned
  • 1/2 cucumber, julienned
  • 10grams coriander, chopped

Method

Step 1 of 3

Preheat oven to 180°C (Gas 4). Rub 1 tbs soy sauce, 1 tsp honey, and 1/4tsp Chinese five spice powder into 2 duck legs. Cover tightly with foil (no gaps) and roast for 1 hour, or until starting to fall apart.

Step 2 of 3

Remove the meat off the legs and shred, then mix in 2 tbs hoisin sauce. Warm 3 tortillas. Spread meat over each wrap and scatter with 1 thumb julienned fresh ginger, 1 seeded and julienned red chilli, 1/2 cucumber, julienned, and 10g chopped coriander. 

Step 3 of 3

Roll up. Slice off the last 5cm and wrap for 1 hour before slicing.
