  • 1tablespoons groundnut oil
  • 2teaspoons sesame oil
  • 2 leeks, trimmed, cleaned and very thinly sliced
  • 2 celery sticks, very thinly sliced
  • 1 carrot, cut into thin matchsticks
  • 1 red capsicum, deseeded and very thinly sliced
  • 100grams pak choi, roughly chopped
  • 400grams squid, cleaned , cut into thick rings
  • 2teaspoons Chinese five-spice powder
  • 4tablespoons light soy sauce
  • 2tablespoons Shaoxing rice wine
  • 3tablespoons sweet chilli sauce
  • 1teaspoons salt
  • 1teaspoons pepper

Description

This Asian inspired seafood stir fry recipe features tender spiced squid, crunchy veggies and soft noodles all served in 10 minutes. Easy, quick and delicious.

Method

Step 1 of 3

Heat the oils in a large nonstick wok or frying pan over a high heat. Add the leeks, celery, carrot and red capsicum and stir-fry for about 3-4 minutes until softened.

Step 2 of 3

Add the pak choi, squid and five-spice powder to the pan and stir-fry for about 2-3 minutes until the squid is just cooked through, being careful not to overcook otherwise it will turn rubbery.

Step 3 of 3

Stir in the soy sauce, rice wine and sweet chilli sauce, season with salt and pepper and heat through, stirring. Serve with cooked rice or noodles.
