  • 1 skinless chicken breast
  • 1/4 cucumber, seeded
  • 1 handful coriander
  • 1 handful mint
  • 1 red chilli, seeded
  • 2 shallots
  • 1 carrot
  • 1teaspoons peanuts, chopped (to garnish)
  • 1 1/4 cup milk
  • 1 red chilli, seeded, chopped
  • 1 garlic clove, chopped
  • 1/2tablespoons sugar
  • 1 lime, juice only
  • 1/2tablespoons fish sauce
  • 1/2tablespoons rice wine vinegar
  • 50grams white cabbage

Preheat oven to 180°C.Poach 1 skinless chicken breast in 300ml milk in the oven for 20 minutes. Cool in the milk. Combine 1 seeded, chopped red chilli, 1 chopped garlic clove, 1 tbsp sugar, juice of 1 lime, 1 1⁄2 tbsp fish sauce, and 1 1/2 tbsp rice wine vinegar. Shred 50g white cabbage, 1/4 seeded cucumber, handful of coriander and mint, 1 seeded red chilli, 2 shallots, and 1 carrot. Slice chicken and mix with everything. Pile on each spoon and garnish with chopped peanuts.
