  • 350grams leftover roast beef, sliced
  • 2 carrots, cut into fine strips
  • 1/2 onion, cut into fine strips
  • 125grams bamboo shoots
  • 1 handful fresh mint leaves
  • 1 handful fresh basil leaves
  • 1 handful fresh coriander, leaves only, plus extra to garnish
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 lime, juice only
  • 2-3teaspoons caster sugar
  • 1 fresh hot red chilli, deseeded and finely chopped
  • 1-2tablespoons Thai fish sauce, such as nam pla

Method

Step 1 of 2

Put the leftover beef, carrots, onion, bamboo shoots, fresh mint leaves, fresh basil leaves, and coriander in a large bowl, and toss together gently. Season with salt and black pepper.

Step 2 of 2

In a small bowl or jug, whisk together the lime juice, sugar, chilli, and fish sauce. Taste, and adjust the seasoning if needed. Pour the dressing over the salad, then garnish with the extra coriander leaves. Serve immediately.
