- 1/3 cup fried shallot, optional

- 3 small red chilli, thinly sliced diagonally
- 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
- 1 bunch Vietnamese mint, sprigs removed
- 1 small red onion, halved lengthways, thinly sliced
- 3 roma tomatoes, cut into wedges
- 1/3 cup lime juice
- 1/2 cup sweet chilli sauce
- 200grams rice stick noodles
- 3 small sirloin steaks
- 1 bunch thai basil, sprigs removed
- 3teaspoons brown sugar
- 2teaspoons vegetable oil

Description
If you’re looking for a new salad to make, try this Thai beef salad recipe. It’s packed with zesty flavours and plenty of crunch.
Method
Step 1 of 3
Cook rice stick noodles in a large saucepan of boiling water as per packet instructions.
Step 2 of 3
Heat oil in a frying pan over medium-high heat. Add steaks and cook for 4 minutes each side for medium rare or until cooked to your liking. Transfer to a plate. Cover to keep warm. Rest for 5 minutes. Combine sweet chilli sauce, lime juice, fish sauce and sugar in a jug.
Step 3 of 3
Thinly slice steak. Combine on a platter with noodles, tomatoes, cucumber, onion, herbs, chilli and shallots. Spoon over half of the sauce and serve with remainder on the side.
