  • 500grams Chicken Mince
  • 1tablespoons Red Curry Paste
  • 4 Shallots , finely chopped
  • coriander, chopped
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 1tablespoons Fish sauce
  • 1 Red chilly, chopped
  • Sweet Chilli Sauce (to serve)

Method

Step 1 of 6

Gather ingredients.

Step 2 of 6

Place mince, chilli, coriander, curry paste, breadcrumbs, fish sauce, egg and spring onions in a bowl.

Step 3 of 6

Combine all ingredients using clean hands or gloves.

Step 4 of 6

Scoop tablespoons of mixture and shape into small cakes pressing to flatten slightly.

Step 5 of 6

Heat oil in a frypan on medium to high heat. Cook the patties on each side until cooked through.

Step 6 of 6

Serve cakes with chilli sauce, lettuce leaves and lime wedges.
