- 100grams shiitake mushrooms, stalks removed, finely chopped
- 5 green shallots, finely chopped
- 1 cup sushi rice
- 1 pinch pepper (for seasoning)
- 1tablespoons soy sauce
- 500grams pork mince
- 1 pinch pink salt ground (to taste)

Place rice into a bowl, cover with cold water and set aside for 1 hour.

Meanwhile, combine pork mince, shallots, mushrooms, soy, salt and white pepper in a bowl.

Divide mixture into 20 portions and roll into balls.
Step 4 of 6
Drain rice and spread out onto a clean tea towel. Roll each mince ball in rice, coating well.
Step 5 of 6
Line a large bamboo steamer with a sheet of baking paper. Place pork balls into steamer and cover with lid. Place steamer over a large saucepan or wok of simmering water. Cook for 20 minutes or until pearl balls are cooked through and rice on outside is tender.
