For the meatballs
- 200grams minced pork
- 30grams shallots, finely diced
- 1tablespoons fresh ginger, grated
- 2tablespoons Thai fish sauce
For the sauce
- 1 lime, juice
- 1tablespoons caster sugar
- 2tablespoons fish sauce
- 1 red chilli, seeded and finely chopped
- 1tablespoons fresh root ginger, grated
- 1/2teaspoons freshly ground black pepper
- 5tablespoons sunflower oil, to fry
- 3 cloves garlic, 2 finely diced, 1 finely chopped
- 1teaspoons soft brown sugar
- 10grams coriander leaves, finely chopped
- 10grams mint leaves, finely chopped
- 1teaspoons fresh coriander, chopped

Description
Meatballs are a great party food – they are versatile, packed with flavour, and delicious served with various dipping sauces.
Method
Step 1 of 4
For the sauce, mix all the ingredients together with 2 tbs water and taste for seasoning.
Step 2 of 4
Place the meatball ingredients into a large bowl. Mix well together and mould 1 ball into the size of a walnut for testing.
Step 3 of 4
Heat a frying pan with 2 tbs of oil and fry the ball on both sides for 2 minutes or until cooked through. Taste to check flavour. You may wish to add more fish sauce or salt. Roll the remainder of the mixture into small balls.
Step 4 of 4
Fry briskly but gently on both sides to cook through. At this stage you can keep them warm in a medium oven until ready to serve. Serve with the chilli-lime dipping sauce scattered with torn coriander.
