  • 300grams peas, frozen or garden
  • 2 medium white onions, peeled and sliced
  • 1teaspoons fennel
  • 1teaspoons cumin
  • 1teaspoons Morroccan spice
  • 1 pinch salt
  • 1/4-plus three extra tsps cup water
  • 60grams flour
  • 1teaspoons cornflour
  • 5tablespoons olive oil

Description

A classic Indian appetiser with a difference, which adds peas and spices for an extra hit of flavour.

Method

Step 1 of 3

Pre-heat the oven to 180°C. In a bowl, mix the flour with the cornflour and then incrementally add the water until you reach a consistency for a nice batter.

Step 2 of 3

Now add the vegetables to the flour mix and combine fully. Pack the mix into small hand size patties and shallow fry with the olive oil for 2 minutes each side.

Step 3 of 3

Carefully remove the patties from the shallow fry, transfer to a baking tray and bake for 10 minutes or until lightly browned on the outside.
