- 1/2 cup plain flour
- 2tablespoons cornflour
- 1/2 green cabbage, shredded
- 3 medium carrots
- 3 spring onions, sliced diagonally
- 2tablespoons worcestershire sauce
- 1/3 cup tomato sauce
- 2teaspoons honey
- 270grams udon noodles
- 1tablespoons mirin
- 1teaspoons dijon mustard
- 1 handful kale, stalks removed, shredded
- 1tablespoons soy sauce
- 2 eggs
- 1/4 cup vegetable oil

Step 1 of 4
Combine sauces, mirin, honey and mustard in a jug. Set aside.
Step 2 of 4
Place cabbage into a bowl. Using a peeler, shave carrots into thin ribbons. Combine cabbage, carrot, kale and spring onion. Add combined flour and cornflour. Stir until combined. Whisk eggs and 1 tablespoon water in a jug. Add to veg and toss until well combined.
Step 3 of 4
Heat 1 tablespoon oil in a large frying pan over medium heat. Add 1/2 cup quantities of vegetable mixture to pan and flatten slightly. Cook for 4 minutes or until golden. Turn and cook for 3 minutes or until golden and cooked through. Repeat with remaining fritters, using more oil as required.

Cook noodles following packet directions. Serve with fritters and dressing.
