Tandoori Chicken Pizza

- 1/3 cup mango chutney
- 2tablespoons tandoori curry paste
- 1 lemon, juiced
- 1/3 cup coriander sprigs
- 1 red onion, cut into thin wedges
- 200grams paneer, crumbled
- 1/3 cup plain Greek-style yoghurt
- 20grams baby rocket
- 1/4 cup flaked almonds
- 1tablespoons vegetable oil
- 500grams chicken thigh fillets, cut into 3cm cubes
- 1 pizza dough
Method
Step 1 of 3
Heat oil in a frying pan over medium heat. Cook chicken until browned and cooked through. Transfer to a bowl and cool. Combine yoghurt, curry paste and juice in a bowl. Add to chicken and toss to combine. Cover and marinate for 1 hour.
Step 2 of 3
Preheat oven to 220°C. Line 2 baking trays with baking paper. Divide dough into 2 pieces. Roll dough into 28cm rounds and place on trays or pizza stones.
Step 3 of 3
Spread chutney onto pizzas. Top with marinated chicken, red onion, almonds and cheese. Bake for 10-15 minutes or until pizza is golden and crisp on base. Top with rocket and coriander, to serve.
