- 800grams rice
- 2tablespoons sesame oil
- 400grams cooked chicken breasts, diced
- 200grams broccolini
- 4 cloves garlic, peeled and diced
- 1tablespoons chilli flakes
- 4 medium eggs, cracked and lightly beaten
- 4tablespoons Szechuan sauce
- 1tablespoons rice wine vinegar
- 1tablespoons soy sauce
- 4 stalks scallions, chopped
Description
A few simple ingredients make this Asian inspired egg fried rice with a light smoky flavour.
Method
Step 1 of 7
Heat up a large non-stick pan to a medium heat and then add the sesame oil.
Step 2 of 7
Fry the diced chicken for 5 minutes while turning.
Step 3 of 7
Add the garlic and broccolini to the pan and fry everything while tossing for 6 minutes.
Step 4 of 7
Cook the rice as per packet instructions and then drain and set to one side.
Step 5 of 7
Add the beaten eggs to the pan and cook while constantly breaking up for 5 minutes.
Step 6 of 7
Add the rice, vinegar, soy and Szechuan sauce to the pan and cook while tossing for 10 minutes.
Step 7 of 7
Remove the fried rice from the heat and serve with scallions to garnish.
