Description
Celebrate versatile, colourful and delicious Australian sweet potato in this simple recipe. These sweet potato parmesan stacks make a crowd-pleasing appetiser.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease a 12-hole, -cup capacity muffin pan.
Step 2 of 4
Toss potato, butter, parmesan, thyme and garlic powder together in a large bowl.
Step 3 of 4
Layer coated potato slices in stacks in muffin holes. Pour any remaining mixture from the bowl over the top of the stacks.
Step 4 of 4
Loosely cover the muffin pan with foil. Bake for 15 minutes or until potato is tender. Bake uncovered for a further 15 minutes or until potato is crispy.
