- 1/2 medium sweet potato, peeled and cut into 4cm pieces
- 1 cup plain wholemeal flour
- 3/4 cup shredded tasty cheese
- 5milliliter extra virgin olive oil cooking spray

Description
Great with dips or cheese, these sweet potato crackers make most of the orange Australian-grown vegetable.
Method
Step 1 of 4
Place potato in a small pot and cover with cold water. Place over medium heat, bring to the boil, then reduce heat to low and simmer for 15 minutes, or until potato pierces easily with a knife.
Step 2 of 4
Transfer potato to a food processor. Blitz until smooth. Add flour and cheese and blitz until combined and dough is formed.
Step 3 of 4
Preheat oven to 180°/160°C fan-forced. Divide dough in half. Place one portion between two sheets of baking paper. Roll until 3mm thick. Remove top sheet of baking paper. Use a knife to cut dough into 3cm squares.
Step 4 of 4
Carefully transfer baking paper to a large baking tray. Spray with oil and bake for 15 minutes, or until lightly browned. Repeat using remaining dough. Allow crackers to cool completely before storing in an airtight container.
