Description
A delicate and elegant cake that's ready in just 3 steps, this strawberries and cream sponge cake is sure to be a hit. Try it for afternoon tea or dessert.
Method
Step 1 of 3
Place strawberries and 2 tbs sugar in a large bowl and toss to combine. Set aside for 15 minutes to macerate.
Step 2 of 3
Meanwhile, using an electric mixer with a whisk attachment, beat cream, vanilla and remaining sugar in a large bowl for 2 minutes or until just stiff peaks form. Refrigerate until needed.
Step 3 of 3
Place 1 cake on a large flat plate. Spread one-third of the cream mixture over top of cake. Reserving strawberry syrup, spoon half of the strawberries on top of cream mixture. Sandwich with remaining cake and push down gently to secure. Spread remaining cream mixture over top of cake, then spoon over remaining strawberries and reserved syrup. Serve immediately.
