  • 530grams Woolworths COOK beef rump mini roast with mustard & herbs
  • 5milliliter olive oil cooking spray
  • 1 sprig rosemary, leaves picked
  • 2 sprigs thyme, leaves picked
  • 475grams Woolworths classic potato mash
  • 1 bunch broccolini, trimmed, halved lengthways
  • 150grams green beans, trimmed
  • 1 zucchini, halved lengthways, thinly sliced diagonally
  • 1tablespoons wholegrain mustard

Description

Give the family a juicy beef roast with creamy mashed potato and vibrant greens and yourself more time to relax. Try this cheat's Sunday roast recipe.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Remove roast from all packaging and place on a baking tray. Cover with foil and bake for 40 minutes or until almost cooked through. Remove foil, top roast with herbs, then spray roast with oil. Bake for a further 10 minutes for medium or until cooked to your liking. Set aside, covered, for 10 minutes to rest.

Meanwhile, heat mash according to packet instructions.

Step 3 of 4

Place broccolini in a large steamer over a saucepan of simmering water. Cook, covered, for 3 minutes. Add beans and zucchini. Cook, covered, for a further 2 minutes or until vegetables are tender. Transfer to a plate.

Step 4 of 4

Slice beef and arrange on a platter with vegetables. Season with pepper. Serve with mash and mustard.
