  • 1.85kilograms lamb leg half roast
  • 2tablespoons extra virgin olive oil
  • 3 tomatoes, thickly sliced
  • 320grams mix-a-mato tomatoes
  • 2 red onions, cut into thick wedges
  • 1/2 bunch thyme sprigs
  • 4 dried bay leaves
  • 1/2 cup dry white wine

Description

This roast lamb is sure to level up your Sunday roast. Accompanied by roasted sweet onion and tomatoes, this lamb is sure to impress.

Method

Step 1 of 2

Preheat oven to 220°C/200°C fan-forced. Place lamb in a large baking dish. Drizzle with half the oil and season. Bake for 30 minutes or until golden. Remove dish from oven. Reduce oven to 180°C/160°C fan-forced.

Step 2 of 2

Arrange tomatoes, onion, thyme and bay leaves around lamb. Drizzle with wine and remaining oil. Bake for a further 30 minutes for medium or until lamb is cooked to your liking. Season. Serve scattered with oregano.
