  • 500grams spaghetti
  • 1 1/2tablespoons extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 rashers rindless shortcut bacon, finely chopped
  • 2 cloves garlic, finely chopped
  • 800grams tomatoes cherry in tomato juice
  • 1/2teaspoons dried chilli flakes
  • 1kilograms Woolworths frozen greenshell mussels, thawed
  • 1/4 bunch basil, leaves picked
  • 40grams parmesan, shaved

Description

A rich and silky tomato, garlic and bacon pasta sauce with juicy mussels. This incredibly tasty seafood spaghetti is ready in just 30 minutes.

Method

Step 1 of 4

Cook spaghetti in a large saucepan of boiling water according to packet instructions. Drain, reserving 1 cup cooking liquid.

Step 2 of 4

Heat oil in a large, deep frying pan over medium-high heat. Cook onion, bacon and garlic for 5 minutes, stirring, or until light golden. Add tomatoes and chilli, then bring to the boil. Reduce heat to medium and simmer, covered, for 5 minutes or until sauce has reduced slightly.

Meanwhile, bring ¼ cup water to the boil in a large saucepan over high heat. Reduce heat to medium-high, add mussels and cook, covered, for 5 minutes or until mussels are cooked. Drain.

Step 4 of 4

Add mussels, pasta and ¾ cup reserved cooking liquid to tomato mixture, then stir over low heat, adding a little more reserved cooking liquid, if needed, for 2 minutes or until combined and heated through. Serve scattered with basil and parmesan.
