  • 1/2 cup continental parsley
  • 2 French shallots
  • 2 lemons
  • 1/4 cup lemon juice
  • 1 lemon, to serve
  • 400grams spaghetti
  • 60grams rocket
  • 2 lobster tails, meat removed
  • 1tablespoons olive oil
  • 300milliliter light thickened cream
  • 2 cloves garlic

Method

Step 1 of 3

Combine zest, parsley and garlic in a small bowl.

Step 2 of 3

Cook spaghetti in a large saucepan of boiling salted water as per packet instructions or until al dente. Drain and return to saucepan.

Meanwhile, heat oil in a large frying pan over medium heat. Add shallot and cook for 5 minutes or until tender. Add lobster and cook for 3 minutes or until it changes colour and is just cooked. Whisk cream, cornflour and lemon juice in a jug. Pour into pan and stir until mixture comes to the boil and thickens slightly. Season. Add to spaghetti and stir to combine. Scatter over lemon gremolata and serve with lemon wedges and rocket.
