Method

Step 1 of 5

Pat fish dry with paper towels. Season skin with salt and set aside.

Combine parsley, chilli, garlic, vinegar and 1/2 cup oil in a bowl. Season.

Cook potatoes according to packet instructions. Using the back of a fork, lightly crush potatoes.

Meanwhile, pat salmon skin dry with paper towels. Heat remaining oil in a large non-stick frying pan over medium-high heat. Cook fish, skin-side down, for 5 minutes or until crisp and brown. Turn and cook for a further 1 minute for medium rare or until cooked to your liking.
