  • 1 orange juiced (see tip)
  • 2tablespoons extra virgin olive oil
  • 1teaspoons mild Indian curry powder
  • 500grams chicken breast, poached or grilled
  • 2 yellow nectarines, halved, destoned, cut into wedges
  • 2 yellow peaches, halved, destoned, cut into wedges
  • 1/3 cup hazelnut kernels, toasted, roughly chopped
  • 120grams baby spinach & rocket
  • 1 baby cos lettuce, leaves separated
  • 4 slices wholegrain sourdough (to serve)

Description

Wedges of sweet and juicy nectarines and peaches on a bed of crispy baby cos lettuce make this summery chicken salad sing.

Method

Step 1 of 2

Place orange juice, oil and curry powder in a screw-top jar. Season, then secure lid and shake until well combined.

Step 2 of 2

Place chicken, nectarine, peach, hazelnuts, rocket and lettuce in a large bowl and toss to combine. Divide among plates, drizzle with dressing and serve with wholegrain sourdough.
