- 1 avocado, peeled and sliced
- 2 mandarins
- 2 green shallots, sliced
- 4 chicken breast fillets
- 2teaspoons honey
- 1 pinch black pepper
- 2teaspoons grain mustard
- 100grams baby spinach leaves
- 1tablespoons olive oil (and another 1/3 cup olive oil extra)
- 1/2 cup macadamia nuts, toasted, chopped
- 1 pinch salt and pepper (to taste)

Method
Step 1 of 3
Heat oil in a large frying pan. Add chicken and cook for 4 minutes each side until golden and cooked through. Remove from pan, cover with foil and set aside for 5 minutes. Slice.
Step 2 of 3
Finely grate rind of 1 of the mandarins and place into a screw top jar. Halve, juice and add to jar. Peel remaining mandarin, removing all the pith and divide into segments. Place into a large bowl with chicken, spinach, avocado, shallots and macadamias. Toss to combine.
Step 3 of 3
Add olive oil, honey and mustard to jar with mandarin juice and rind. Shake well to combine and season to taste.
