Description

Cake decorating doesn't have to be hard. Try this easy hack and turn sliced pineapple into flowers to arrange over frosted mud cake for a show-stopping centrepiece.

Method

Step 1 of 3

Preheat oven to 120°C/100°C fan-forced. Line 2 large trays with baking paper.

Step 2 of 3

Slice pineapple crossways as thinly as possible. Place pineapple slices between sheets of paper towels to remove excess moisture. Arrange slices, in a single layer, on trays. Bake for 1 hour 20 minutes, turning slices halfway through cooking, or until dehydrated and edges start to brown (see tip). Remove from oven and set aside to cool completely.

Step 3 of 3

Remove cakes from packaging. Trim cake tops to remove frosting, then discard tops. Place one cake, cut-side up, on a plate. Spread cake with one-third of the frosting, then sandwich with remaining cake, cut-side down. Spread top and side of cake with remaining frosting. Decorate cake with pineapple flowers. Serve immediately.
