  • 1tablespoons Woolworths extra virgin olive oil
  • 100grams chorizo, skin removed, finely chopped
  • 2teaspoons smoked paprika
  • 1 head garlic, halved crossways
  • 2 punnet sweet berry truss tomatoes
  • 400grams cherry tomatoes
  • 1kilograms green prawns, peeled, deveined, heads and tails intact
  • 1teaspoons dried chilli flakes
  • 1/2 bunch continental parsley, leaves picked, finely chopped
  • 100grams Danish feta, crumbled
  • 1 olive sourdough loaf, thickly sliced (to serve)
  • 1 lemon, cut into wedges (to serve)

Description

Simple and delicious, you'll love making this one tray prawn bake with tomato and feta as much as your family will love eating it.

Method

Step 1 of 3

Preheat oven to 200°C/ 180°C fan-forced. Combine oil, chorizo and paprika in a large, deep baking dish. Add garlic and truss tomatoes, then bake for 15 minutes or until chorizo is crisp.

Step 2 of 3

Add cherry tomatoes, prawns and chilli flakes. Season, then gently toss to combine. Bake for 15 minutes or until prawns have changed colour and are cooked through.

Step 3 of 3

Scatter over parsley and feta, then serve with sourdough and lemon wedges.
