  • 400grams salmon, 4 boneless, skinless fillets
  • 250grams tenderstem broccoli, trimmed

Description

This Italian-inspired salmon traybake is an easy midweek recipe with very little clean up.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Place the potatoes in a large roasting tin and toss with oil. Roast for 20 minutes.

Step 2 of 3

Mix the breadcrumbs, ground almonds, parsley and lemon zest in a large bowl. Stir in the pesto.

Step 3 of 3

Add the broccoli and salmon fillets to the roasting tin with the potatoes. Spread the top of each salmon fillet with the pesto topping. Roast for 15 minutes, until the salmon is cooked through. Serve with a squeeze of lemon juice.
