- 1/2 cup red wine
- 1 red onion (chopped)
- 200grams button mushrooms (quartered)
- 12 pitted prunes
- 2tablespoons baby capers
- 1/4 cup extra virgin olive oil
- 1/3 cup almonds
- 100grams baby rocket
- 280grams whole Sicilian olives (drained)
- 1/4 cup sherry vinegar
- 4 garlic cloves (finely chopped)
- mashed potato (to serve)
- 1kilograms chicken pieces
Method
Step 1 of 4
Preheat oven to 180°C.
Step 2 of 4
Heat 1 tbs oil in a heavy-based ovenproof roasting pan over medium-high heat. Season chicken, add to pan, skin-side down, and cook for 5 minutes or until golden. Turn chicken and cook for a further 2 minutes to seal. Transfer to a plate.
Step 3 of 4
Add remaining oil, onion, mushroom and garlic to pan. Cook for 5 minutes or until onion softens. Add prunes, olives, capers and almonds and stir to coat. Stir in vinegar and wine and bring to the boil. Return chicken to pan and cover with a lid or foil. Bake for 45 minutes or until chicken is cooked through and tender.

Top chicken with rocket and serve with mashed potato.
