  • 3 medium onions, peeled and quartered
  • 1 fennel bulb, sliced
  • 4 cloves garlic, unpeeled
  • 4 large chicken breasts, skinless
  • 400grams red grapes
  • 2tablespoons olive oil
  • 1/3 cup white wine
  • 4tablespoons walnuts, chopped
  • 1tablespoons wholegrain mustard
  • 1tablespoons red wine vinegar
  • 2tablespoons extra virgin olive oil
  • 2tablespoons tarragon, fresh, chopped
  • 1 pinch cracked black pepper

Description

This traybake is an easy way to enjoy a delicious, restaurant quality dish at home. Serve with potatoes or crusty bread on the side.

Method

Step 1 of 4

Pre-heat the oven to 190°C/170°C fan-forced. Arrange the onions, fennel, garlic cloves and grapes in the a large roasting tin. Drizzle over the oil, mix well and season with black pepper.

Step 2 of 4

Top the vegetables with the chicken breasts and pour the wine into the roasting tray. Roast for 30 minutes, remove from the oven and add the walnuts. Roast for 25 minutes more, until the chicken is golden and cooked through.

Step 3 of 4

Whisk together the extra virgin olive oil, red wine vinegar, mustard and tarragon and season with cracked black pepper.

Step 4 of 4

Serve the chicken with the vegetables and grapes and dressing spooned over the top.
