This tray bake could not be simpler to pull together on busy evenings and saves on washing up time too.
Method
Step 1 of 2
Pre-heat the oven to 180°C/160°C fan-forced. Tip the leeks and potatoes into a deep roasting tray and drizzle with oil. Toss to coat and roast for 20 minutes.
Step 2 of 2
Add the butterbeans, thyme, garlic, lemon juice and zest and pour over the stock. Place the chicken breasts on top and roast for 20 minutes, until the chicken is cooked through.
