For the marinade
  • 3tablespoons hoisin sauce
  • 1tablespoons maple syrup
  • 1tablespoons toasted sesame oil
  • 5centimeters ginger, peeled and grated
  • 2 cloves garlic, peeled and minced
  • 1 medium green chilli, sliced
  • 8 chicken drumsticks
  • 1 large orange, cut into wedges
  • 4 medium spring onions, sliced
  • 2 medium carrots, peeled and sliced diagonally
  • 1 medium green capsicum, cut into chunks
  • 50grams cashews (to serve, optional)

Description

This traybake makes for a fantastic fakeaway dish served with rice or noodles.
Instruction tip
Top with cashew nuts for crunch.

Method

Step 1 of 4

Mix the marinade ingredients in a small bowl and set aside. Slash the chicken legs and place in a large bowl. Then pour the marinade over the chicken. Cover and marinate in the fridge for at least 30 minutes.

Step 2 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Place the orange wedges, spring onion, carrots and capsicum in a large roasting tray and pour over the chicken and any excess marinade.

Step 3 of 4

Roast for 50-60 minutes, until the chicken is cooked through and sticky and the vegetables are soft.

Step 4 of 4

Serve the chicken and veggies with rice and top with cashews if desired.
