For the spice mix
  • 2teaspoons smoked paprika
  • 1teaspoons oregano
  • 2teaspoons cumin
  • 1teaspoons garlic powder
  • 1/2teaspoons cayenne pepper
  • 400grams tempeh, sliced
  • 2 large red onion, chopped into wedges
  • 3 large capsicums, red, green and yellow, chopped
  • 2tablespoons olive oil
  • 2 medium lime, 1 juiced, 1 chopped into wedges
  • 1 large avocado
  • 2tablespoons jalapeno peppers
  • 1/2 bunch coriander, fresh, chopped

Description

Traybake fajitas are the easiest option for a quick midweek Mexican feast.

Instruction tip
You could use fajita spice mix in this recipe for an even shorter prep time.

Method

Step 1 of 4

Pre-heat the oven to 200°C/180°C fan-forced. Whisk the spices together in a small bowl.

Step 2 of 4

Drizzle a large baking tray with the oil and add the capsicums and red onion wedges. Top with the sliced tempeh, sprinkle over fajita spice mix and half the lime juice and mix very well to coat and roast for 20-25 minutes.

Step 3 of 4

In a medium bowl, mash the avocado with lime juice, add chopped coriander stalks and stir in the jalapenos.

Step 4 of 4

Serve the tray bake in the middle of the table, scattered with fresh coriander and lime wedges with guacamole and tortillas on the side.
