- 1 large red onion, peeled and chopped
- 500grams baby potatoes, halved
- 2 large red capsicums, chopped
- 400grams butterbeans, can, drained
- 2teaspoons smoked paprika
- 3tablespoons olive oil
- 3 cloves garlic, peeled
- 400grams smoked tofu, torn
- 60grams green olives, pitted
- 1 medium lemon, juiced and zested
- 50grams almonds, chopped
- 3tablespoons parsley, fresh, chopped
- 1 pinch cracked black pepper
Description
Smoked tofu is delicious with creamy butterbeans, crunchy almonds and roasted vegetables in this easy one pan meal.
Method
Step 1 of 4
Pre-heat the oven to 200°C/180°C fan-forced. Par boil the potatoes in a large saucepan filled with water for 8-10 minutes and drain.
Step 2 of 4
Tip the potatoes, red onion, capsicums, garlic and butterbeans into a large roasting tin. Drizzle with a tablespoon of olive oil and roast for 20 minutes.
Step 3 of 4
Remove from the oven and add the tofu, olives and almonds and sprinkle over the smoked paprika. Drizzle the remaining oil, mix well to coat and roast for 8 minutes.
Step 4 of 4
Remove from the oven, scatter with fresh parsley and lemon zest, squeeze over the lemon juice and serve.
