  • 400grams pearl couscous, rinsed
  • 2 medium chicken breasts, no skin or bone and diced
  • 1 2/3 cup chicken stock
  • 1 small white onion, peeled and diced
  • 4 cloves garlic, peeled and diced
  • 3tablespoons lemon juice
  • 100grams black olives, pitted and halved
  • 160grams rocket, washed and drained
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 80grams feta, grated

Description

Mediterranean flavours combine quite well with this traditional Middle Eastern dish.

Method

Step 1 of 5

Place the couscous and 400ml of the chicken stock in a pot and bring to the boil, allow to simmer for 25 minutes.

Step 2 of 5

Heat up a pan to a medium heat the canola oil and fry the diced chicken for 6 minutes while turning.

Step 3 of 5

Add the onion, olives and garlic to the pan and fry for a further 4 minutes.

Step 4 of 5

Once the pearl couscous is cooked, remove from the heat and allow to cool slightly.

Step 5 of 5

Combine the couscous with the rest of the ingredients before serving with rocket and parmesan as garnish.
