- 700grams firm white fish fillets, cut into 5cm pieces
- 200grams green beans
- 1tablespoons finely grated fresh ginger
- 150grams snow peas
- 150grams sugar snap peas
- 2tablespoons lime juice
- 1 lime, wedges (to serve)
- 1teaspoons ground coriander
- 1/2teaspoons ground turmeric
- 120grams baby spinach leaves
- 1 1/4 cup brown basmati rice
- 2tablespoons olive oil

Method
Step 1 of 4
Cook rice following packet instructions. Season. Stir in spinach until wilted.

Meanwhile, combine lime juice, ginger, coriander, turmeric and half the oil in a shallow dish. Add fish and turn to coat.
Step 3 of 4
Heat remaining oil in a large frying pan over medium-high heat. Cook fish for 4-5 minutes or until it turns opaque and is just cooked through.
Step 4 of 4
Meanwhile, cook beans, sugar snaps and snow peas in a saucepan of boiling water for 1 minute or until just tender. Drain. Serve fish on rice with greens and lime wedges.
