- 400grams tofu, firm, cut into 4 steaksingredient tip
- 2teaspoons smoked paprika
- 1teaspoons oregano
- 1teaspoons ground ginger
- 2teaspoons garlic powder
- 1teaspoons cayenne pepper
- 2tablespoons maple syrup
- 2tablespoons olive oil
- 2 large lemons, 1 sliced, 1 juiced
- 1 large red onion, peeled and chopped
- 2 large red capsicums, chopped
- 2 medium sweet potatoes, peeled and chopped into wedges
- 2 medium corn on the cob, sliced in half
Description
Tofu steaks roast beautifully in this colourful traybake.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Pat the tofu dry with a paper towel and score each steak with a knife.
Step 2 of 3
Drizzle a large baking tray with the oil and add the sweet potatoes, capsicums, onion, corn on the cob, sliced lemon and tofu steaks. Sprinkle over the herbs and spices, add the maple syrup and lemon juice and mix very well to coat.
Step 3 of 3
Roast for 45 minutes or until the sweet potatoes are tender, and serve.
