10 Ingredients

  • 2tablespoons olive oil
  • 600grams sweet potatoes, peeled and chopped
  • 250grams beetroot, peeled and chopped
  • 250grams carrots, peeled and chopped
  • 2 large lemons, 1 sliced, 1 juiced and zested
  • 3tablespoons miso paste
  • 4tablespoons maple syrup
  • 500grams puy lentils, ready cooked
  • 100grams spinach
  • 50grams walnuts

Description

This lentil traybake is packed with sweet and savoury flavours with a rich miso sauce.

Method

Step 1 of 3

Pre-heat the oven to 200°C. Tip the vegetables into a large roasting tin and toss with the oil. Roast for 10 minutes, add the lemon slices and roast for 25 more minutes, tossing halfway through cooking.

Step 2 of 3

Whisk the miso paste, lemon juice, zest and honey together in a small bowl. Pour over the vegetables and cook for 10 minutes more until caramelised and sticky.

Step 3 of 3

Heat the lentils according to pack instructions, stir into the roasting tin along with the spinach and walnuts and serve.
